Cardamon buns

Serves 6-8 buns
Preparation 30 mins + 1h30 rest

INGREDIENTS

DOUGH:

  • Flour: 400g

  • Fresh yeast: 25g

  • Milk: 250ml

  • Butter: 75g

  • Sugar: 45g

  • Salt: 1/2 tsp

  • Cardamom: 1 tbsp

FILLING:

  • Cardamom: 1 tbsp

  • Butter: 75g

  • Pistachios: 2 tbsp

  • Sugar: 45g

GLAZE:

  • Maple syrup

  • Water

  • Pistachios

METHOD

Melt the butter into a pan. Add the milk and heat it to 37 °C. Pour the mix into the bowl of a stand mixer. Dilute the fresh yeast. Then, add the salt, sugar, and the ground Cardamom.

Start to knead while adding the flour little by little. Knead the dough for about 10 mins until it detaches from the edges. Scrape the dough out onto a lightly floured surface and shape it into a ball, tucking the edges toward the center.  Place it in a greased bowl, and cover with a clean kitchen towel. Place the bowl in a warm place and let it rise for 40 minutes.

In your stand mixer’s bowl, combine butter, sugar, and freshly ground Cardamom and mix until creamy and smooth.

Once the dough has risen, divide it in half and roll out each dough into a rectangle the size of your baking sheet. Spread the filling on top and fold them in half to trap the filling inside. Cut them into slices 4 cm wide along the entire length. Twist each strip, then tie them by sliding the ends under the dough. Transfer the brioches to the baking sheets and let them rise for 30 minutes.

In a bowl, combine the maple syrup with 1/2 tbsp of water in a second bowl. In a second bowl, combine some sugar and some ground Cardamom to make it flavored.

Preheat the oven to 220 °C. Bake the brioches for 10 minutes. Brush with some maple syrup and sprinkle with Cardamom flavored sugar and pistachios.
