Spiced Pineapple and Vanilla Tartlets
Makes 6 small tartlets
ingredients
Pineapple: 1
Granulated sugar: 175g
Vanilla pod: 1/3
Star anise: 3
Flour: 150g
Icing sugar: 45g
Butter: 100g
Zest of one lime
Egg yolk: 1

method
Pineapple Jam
Cut the pineapple into pieces and blend until you get a puree. Strain the puree to eliminate excess juice.
Put the pineapple puree in a saucepan, add sugar, star anise, vanilla pod, and its seeds.
Heat over medium-low heat, stirring until the sugar dissolves. Once the sugar melts, bring to a boil then simmer on low heat for 30 minutes, stirring occasionally. Let cool, then remove the star anise and vanilla pod.
Sweet Pastry Dough
In a mixer bowl, sift the flour and icing sugar. Add butter in pieces and lime zest. Blend a few times until a crumble texture is achieved.
Add the egg yolk and blend again until a dough starts to form. Roll out the dough between two sheets of parchment paper and lightly knead before spreading. Refrigerate for at least 30 minutes.
Assembly
Preheat your oven to 180 °C.
Once the dough is rested, cut out 6 discs the size of your molds and keep the scraps for the tartlet strips.
Fill the tart bases with pineapple jam. Form lattice tops with small strips of dough. Trim the excess.
Brush the tartlets with beaten egg yolk, press a clove into the center of each tartlet, and bake for about 15 minutes. Let cool before unmolding and remove the clove before serving.
