Turmeric homemade bread
Serves 1 loaf
Preparation 3 hours
INGREDIENTS
Strong bread flour: 350g
Rye flour: 100g
Dehydrated baker’s yeast: 1/2 packet
Turmeric: 2tsp
Lukewarm water: 270ml
Coarse salt: 15g
Walnuts: 50g
Flour for dusting
METHOD
Pour the lukewarm water into a mixing bowl and dissolve the salt in it.
Roughly chop the walnuts into small pieces.
In a separate mixing bowl, mix the all-purpose flour, whole wheat flour, turmeric, and active dry yeast.
Add the dry ingredients to the mixing bowl with the water and salt. Mix well until the dough comes together.
Knead the dough for 10 minutes by hand or with a stand mixer until it becomes smooth and elastic.
Add the chopped walnuts to the dough and knead them in until they are incorporated.
Cover the dough with a damp cloth and let it rise in a warm room for 1.5 hours.
After the first rise, shape the dough into a ball and place it on a baking sheet covered with baking paper. Alternatively, use a small round casserole dish.
Cover the dough with a damp cloth and let it rise for another 40 minutes in a warm room.
Preheat the oven to 220C.
Dust the bread with flour using a sieve.
Use a knife to make light incisions on the top of the dough.
Place a small ramekin of water in the oven to create steam during cooking.
Bake the bread for 35 minutes or until golden brown.
Once cooked, let the bread cool before slicing and serving.
