Savoury scones with herbs

Serves 4

INGREDIENTS
  • Single cream: 180g

  • Cilantro & chives: a good handful

  • Salted butter: 125g

  • Flour: 300g

  • Baking powder: 11g

  • Salt: 1tsp

METHOD

Preheat your oven to 180C.

Take a quarter of the single cream and blend it with the herbs in a food processor until you get a smooth, green texture. Set aside.

Slice the butter into small pieces. In a food processor, place the butter, flour, baking powder, and salt. Pulse a few times until you get a sandy texture.

Transfer the mixture into a bowl and form a hole in the middle. Add the remaining cream and the herb mix. Mix until just combined - be careful not to overwork the dough.

Spread the dough on a lightly floured work surface to a thickness of 3cm. Cut out the scones using a 5cm pastry cutter.

Place the scones on a piece of parchment paper and bake for 15 minutes in the oven.

Serve warm with some salmon and a delicious Greek yogurt sauce.

Greek yogurt sauce:

To make the sauce, simply combine 4 tbsp of Greek yogurt with chives, olive oil, red wine vinegar, and a pinch of celery salt. Mix well and adjust the seasoning to your taste.
