A Sweet Touch of Christmas: Festive Cookies

 

What’s better than the scent of cookies baking on a chilly winter day? These Christmas cookies strike the perfect balance between tradition and a healthier twist, making them a must-try for the season.

A hint of carob powder, giving the cookies a warm, subtly sweet flavor while staying unique and festive. Perfectly spiced and buttery, they pair beautifully with a cup of hot cocoa by the Christmas tree.

 

Christmas Cookies

Make about 20-25 cookies

INGREDIENTS

  • 110 g of unsalted butter

  • 80 g of granulated sugar (I use coconut sugar for a rich caramel note)

  • Salt: a pinch

  • 1 egg

  • 1/2 tsp of villa extract

  • 1 + 1/2 tsp of carob powder (or swap with gingerbread spice, cinnamon, and a touch of ginger powder)

  • 195 g of all-purpose flour

METHOD

  1. Cream butter, sugar, and salt in a stand mixer until light and fluffy. Add the egg and vanilla extract; mix until smooth.

  2. In a separate bowl, combine the flour and carob powder (or spices). Gradually add the dry mix to the wet ingredients, mixing until just combined.

  3. Roll out the dough between two sheets of parchment paper. Chill in the fridge for at least 2 hours.

  4. Preheat the oven to 175°C. Line a baking tray with parchment paper.

  5. Cut out your favorite festive shapes and freeze for 3-5 minutes to help them hold their shape.

  6. Bake for 8-10 minutes. The edges should remain light—don’t overbake! Allow to cool completely on a wire rack.

Carob powder is made from roasted carob tree pods and is a naturally sweet, caffeine-free alternative to cocoa. It’s rich in antioxidants, high in fiber, and gentle on digestion, making it a healthier addition to your baking. Plus, its earthy flavor pairs perfectly with holiday spices!
